sunny side up over easy fried eggs with feta, sage and tabasco:

heat up butter/oil/non hydro. margarine in a pan.
throw in torn pieces of fresh sage
crack a few eggs into the pan.
season with salt, pepper; a few dashes of tabasco; and a couple tablespoons of crumbled feta.
cover pan with a lid and wait a few minutes. the point is to poach the top of the eggs so that you don't have to flip them.
remove from pan, plate and eat.
