tofu salad



lettuce, red leaf
ginger, Tsp. grated, fresh
sesame or olive oil, about a Tsp or so
fresh lemon or lime juice
diced tofu
a few splashes of ponzu or soy sauce.
peanut butter

wash, drain lettuce. put in bowl.
dice tofu. put on top of lettuce.
drizzle or just scoop out a Tsp. of peanut butter, onto the tofu.
grate and add ginger
if you have bonito flakes, that too.
ditto with chopped scallions.
add oil
squeeze the lemon/lime, about a tsp.
add ponzu sauce.

delish. and healthy too.
