happy vegan chocolate chip cookies
(see recipe below)


this is a damn decent cookie recipe.

after reading some of the comments to the recipe (see website), i decided to replace the water with soy vanilla milk and the juice of berries.

i added flax and pumpkin seeds, walnuts, raisins and
in some, raisins, carob chips and peanut butter

instead of raw sugar i used brown sugar.

i read somewhere canola oil has some issues (modified canola oil is supposed to be extremely harmful to our health) and so rather than figure out what brands have been modified and which not ... i decided to use an organic grapeseed oil.

and then i added a few mashed bananas.


i halved the recipe quantities, cooking the cookies in batches ... tasting and adjusting as i went.

totally excellent results.

my favorite combination was the one that had lots of berries and peanut butter swirled into the mix. wow.


they were so good, i ate quite a few. allison, one of my housemates, too. the rest, i froze per her suggestion. she was right... they reheat really well in a preheated oven.



black beans and rice



wash and cook brown rice (1 cup rice, 1 1/2 cup water, a pinch of sea salt).



sautee minced and chopped garlic and onions in a few Tsps. of virgin olive oil. best you can afford.
add a chopped green pepper
add some minced hot peppers
add black beans that have been soaked in water overnight.
add a pinch of sea salt
add 1-2 Tsps. vinegar
add lots of water, and allow it to boil down.

this takes about 45 minutes to cook.



serve with salad seasoned with lemon, lime, olive oil and a bit of sea salt.
best damn oatmeal i've ever had, let alone made:





i've got an edge, i said to dale.
it's normal he said. people get an edge when they're under stress or pressure.
ah ... . i replied. that makes total sense.




the recipe for the best damn oatmeal i've ever had, let alone made:


oatmeal
water
1/4 tsp pumpkin spice
tsp or two of vanilla
cup of berries (blueberries and cranberries), frozen or otherwise
Tsp or two of brown sugar

prepare. eat some with vegan margarine. refridgerate rest.

next morning.
brown ripe bananas in coconut oil.
add the oatmeal.
add 1/4 cup of vanilla soy

bring to boil.
take off the heat.
spoon into a bowl.
allow to cool a little.
eat,
cherishing every bite.

vodka tonic


healthy shot of vodka, or two .. on the rocks
Tsp brown sugar
1/3 lime, freshly squeezed and left in glass
tonic water


stir, drink and share with excellent company :P :)
